Whilst searching for Ghost Song, I came across a really good song by the Doors of the same name. Not a instrumental song in the slightest though. Very good just the same though.

I dunno if film scores count, but yeah, Martinez' Solaris is astounding (gamelan driven...I was going to say soaring but that's not really it...gliding strings). Pretty much anything by Thomas Newman is wonderous too. It sounds a bit trite these days as he's been ripped off endlessly for like ten years of film and TV scores, but he's still the guy who makes all those bizarre instruments and phrasings work and really shook up orchestral scores. Throw a dart at The Player soundtrack, American Beauty, you name it. He seemed a bit rigid on Finding Nemo, but I'm not sure if it was simply he can't do action or he was directed to be more conventional, he really only showed his true colours in small ways like the track Haiku.
Anyway, these are other instrumentals.
Living Colour - WTFF (kinda funk rock hip hop madness)
Telefon Tel Aviv - When it happens it moves all by itself (bit of a cheat, they're a largely instrumental electronic group, but this track is a preprise of one of the vocal ones. Starts out all hammond and strings and sort of falls to bits like electronic folks are wont to do)

This is actually a fair point, I normally hate "post a list of your own choices in x subject" threads.
Unfortunately I'm rubbish at talking about music, but I love Call of Ktulu just for the intricacy mixed with raw seething power. Dunno if maybe Metallica are just figures of fun these days, but Ride the Lightning was an awesome album.

Turning the lights off and listening to Slint's "For Dinner..." with headphones on is one of my favorite things to do. Not technically difficult, from what I can tell, but hypnotizing nonetheless.

Another vote here for Black Sabbath's "Laguna Sunrise" and Faith No More's "Woodpecker from Mars"
Others I like:
Scratch Acid - "Albino Slug" : Atmospheric rock instrumental with a little synth for texture. They even used a bit of it in an episode of "Friday Night Lights"! I nearly fell out of my chair and was probably one of 3 people to recognize it.
Butthole Surfers - "The Legless Eye" : Industrial-sounding against a synth backdrop; it ends up sounding like an outtake from The Terminator or Halloween soundtracks.
Butthole Surfers - "Eindhoven Chicken Masque" : Rock instrumental with a heavy dose of horns (but decidedly not ska-influenced). For some reason it reminds me of a "rock" version of a spaghetti western soundtrack cut.
Butthole Surfers - "Psychedelic Song (live)" : 10+ min. jam that doesn't suck like most jam band stuff.
The Thing Soundtrack : Very atmospheric and creepy. Worth it just to hear the full version of songs that were only partially used in the movie.
Bombay the Hard Way : This is one of my favorite albums. It's unused orchestral Bollywood soundtrack cuts (from the 60's & 70's) tweaked with hip-hop beats. Imagine mellow orchestral hip-hop and you'd be close to what about 90% of the album is. I originally bought it for kitsch value and have since grown to love it.

Ok had a listen to a few more.
Air - Alone in kyoto is quite good. I cant believe I never heard that song from living colour before as I`m a huge living colour fan. Meister Petz has a nice ring to it also.
Still tracking down the rest.
Got myself a very nice little instrumental playlist after all the recommendations here :D. Very glad I started this thread up.

Got another one - my single of 2007: the song Atlas by Battles. I suppose it's not strictly instrumental in the purest sense, but its vocals are practically indecipherable and also it rocks so hard.
Others are coming to me: Sofa No 1 by Frank Zappa. Shake your Crow by Volcano the Bear. And anything Stars of the Lid ever did.

One thing I love about the majority of the tunes people are posting the names too, is in how hard it is to track these down, but completely worth the time spent searching once you find them.
Listening to "Slint - For dinner...." as I type this. Nice sounding track. Very entrancing style to it. Be listening to Albino Slug straight after.
