I like Jethro Tull's take on Bach's Bouree in Em a lot. I sadly can't think of any other vocal acts offhand who have done any instrumentals worth a damn and haven't been mentioned yet.
Edit: Oh yeah, the Beach Boys "Let's Go Away for Awhile" is also awesome.

The Allman Brothers Band - Jessica
The song suddenly popped into my head. It's not even a song I particularly love. But it really sticks in my head, and I like playing it. Anyway, this thread is turning into classic instrumental tracks, and this is one.
Similarly, if scumble is allowed to list Crazy Diamond, then I'd add the last instrumental half of Eric Clapton's Layla, which anyway segues into almost a completely different track anyway. Also incredibly catchy and a classic instrumental riff.
Edit: oh, and Sleepwalk ... esp I like the Brian Setzer interpretation.

The instrumental version of Wicked Game by Chris Isaak (final track on the album of the same name) is bloody fantastic. Song has a very haunting sound to it without words in there.

I'd suggest some others of ELP's, such as The Barbarian or Tank, although listening to it, Tank has a rather dull drum solo in the middle...
Also, perhaps Revolution 9 on the Beatles' White album, assuming a tape recorder is classed as an instrument.

I gave those tracks a chance, with the exception of A warm place (all 2.5 minutes of it) they were average.
So maybe they arn't the horrible singing cum stains that I thought. But that doesn't impress me much.
Maybe I just don't get it :(
