TDS would certainly give you much better training for Doom 3 than Dromed. Conceptually the Flesh and Doom 3 engines are very similar, they differ mainly in terms of implementation quality and performance.

In addition to what's already been said, you're making the flawed assumption that people here only ever want to make levels for Thief II or TDM. UE3 is being licensed by a wide variety of companies, so having experience with UEd and its variants will be useful for anyone who wants to make levels for other games and mods.
