A bunch of Hydoponics staffers got the midwife treatment, not every woman on board. Whoever managed to let a worm burrow inside them, man or woman, got hybridized, like Turnbull.
The nursing staff, specifically:

Marc, what's going on? I thought it was weird when you asked me to send up sixteen of my female staffers... but... what have you done with them? I'm shorthanded up here? Also, have you heard from Watts, Sanger or Polito? It's like everyone's gone on vacation and didn't bother to tell me."
16 actually seems about right. Unless you spend a lot of time just running around Hydro killing things, you really don't encounter very many Midwives in the course of the game.

Why bother? They kill the host's brain and flesh and then psionically control them giving their mind just enough independence to figure that they're fucked. Most of the life cycle of the hybrid is spent developing the brain and gaining muscle mass, there's no reason or indication they'd bother or even can change something on a chromosomal level
Go take a look at a gang, then tell me how many females are in it. Then think of why. Then come back when you figure it out.

Significantly lower amount. Males produce larger concentrations of muscle mass, among other things. For the Many, it would be easier to just change the DNA of the victim than to use large amounts of biomass to make up for the difference.

And (RL) males get the enhanced muscles by... eating biomass?

Yes. Eating. Compared to having to selectively engineer the muscle growths, and then construct them from scratch. Which would be a lot more complicated than just using the host's DNA to produce muscle.

How can they be dead when there are audio logs of crewmembers detailing the transformations?
"A change is upon me and the path is more glorious that I even imagined..."
Dr. Watson says "They want you alive, as a host!"
You're alive during the transformation, but the Many fills you with joy or something so that you embrace your transformation. Unless your badass like Diego.

If they're dead, blood does not circulate and the tissue cannot function, preventing muscle use. If they're dead, they can't move. Since the Many are not supernaturally explained as being zombies, they're not dead.

It's actually been a while. I think it differed. The ones that changed slowly did so without being infested with the worm. It started out as mind control then the body itself was slowly modified. Your mind becomes the manys then your body follows suit. You still have a mind but one thats in union with the many
The worms latched onto a human host, Slowly changing its internal structure. The human "Dies" only so that the new organs / control systems can take over the normal human functions. You basically become the worm. However the human mind remains alive but it no longer controls the body, the worm dies. Hence the "Kill me!" and "RUN!" audio. Having so much of your body replaced would change the look of anyone.
Of couse it is just a game and the programmers had niether the time, money or PC memory to create more than one character model of each type!

It's a stupid sexist discrimination on developers' side, that's what it is!
WOMEN FOR HYBRIDS!
