There is a subjective degree to the appreciation, or not, of every form or art or entertainment. That doesn't mean you cannot judge good or bad taste. Crappy stuff is crappy stuff, and wailing against something without understanding what you are missing is just wrong. It's like not criticising the "How do you get a Pikachu onto a bus?" joke without actually knowing what a Pokemon is.

For the record, sexual stuff is USUALLY the funniest. When you get a movie like American Pie or the million Something About Mary knockoffs, it seems like the ONLY thing the writers find funny. Fucking an apple pie was funny the first time, not the second or tenth. Sexual humor is funny because it's shocking, but when it's a crutch for writers with a 12 year old boys sense of humor, it's just redundant and boring.
I forgot about the Farley brothers and Kevin Smith.

The Big Lebowski was funny and one of my favorite movies, if you've not see it see it, also office space.

Really great comedies are few and far between, I find.
If you're looking for the modern John Candy and the ilk, I reckon that you're probably going to get it from the 40 Year Old Virgin / Knocked Up / Superbad squad. As they're producing that sort of riffing situational comedy that was the sort of thing Candy excelled at in Uncle Buck, Planes, Trains... and so on. I wasn't a huge fan of 40 but Knocked Up was hilarious and Superbad looks good (also has Michael Cena from Arrested Development, the funniest thing to happen in the last decade PERIOD - if you can slum it for intelligent comedy that just happens to be a sitcom, you'll get no greater reward than all three seasons of AD).
Hot Fuzz and Shaun of the Dead are amazing and easily the best singular comedy movies around at the moment, but they belong in a similar category to the Police Squad and Airplane movies of the 80s, so these aren't exactly what you're looking for.
While I can't say I particularly enjoy the gross-out genre of American Pie(s) and Scary Movie(s), I still think there are movies like There's Something About Mary which quite sophisticatedly use elements of that brand of comedy.
Also, I can't vouch for the Will Ferrel and Vince Vaughn double team because I think Vince Vaughn is one of the worst actors on the face of the planet and if I see another movie that he fucking sleepwalks his way through doing his deadpan delivery as if he's some sort of stand-up comic, I will officially go on a warpath with Hollywood - oh wait, he's doing FRED CLAUSE. I'm sure that'll be fucking awesome. Even Paul Giamatti is slumming it in that one!
Honestly, other than Swingers, has he done anything worth a damn?
I actually enjoy Will Ferrel on occasion, he's another actor who tends to mail in his performance or actually give a damn. Recently I caught Blades of Glory (with co-star Napoleon Dynamite, which was an overrated okay flick) which was actually pretty damn funny ... although the humour may have been augmented by my lack of sleep and awkward position in the chair with a child asleep on my chest in the middle of a turbulent flight.
Other great recentish comedies just for comedies sake are: Grosse Pointe Blank, Chasing Amy, Hitch, The Big Lebowski, High Fidelity, South Park - The Movie, Office Space, Zoolander, Meet the Parents (most of it, anyway), Clerks and Clerks II.
Oh and Oskar, I saw Black Sheep on the flight back from San Fran, it was pretty awful. It tried to be Evil Dead-like but failed primarily due to the lack of a charismatic lead like Bruce Campbell, instead it has this wet-eared limp-wristed non-character in the main role.
For the record, I think Planes, Trains and Automobiles is easily in my top three comedies ever.

Reading through this thread has reminded me of some really good comedies that are fairly recent that I've seen (Napolean Dynamite, Hot Fuzz, Galaxy Quest, Office Space), so now I feel sort of bad for maliging the last decade of comedy. There are definitely quite a few mentioned here that I haven't seen at all that I will look into.
As for Will Farrell, he was brilliant on SNL, but every movies I've seen him in wasn't very good, but according to imdb I've missed most of them. Even though I mentioned 40-Year-Old Virgin as one I may not have liked, I actually thought that it was pretty good, mainly because Steve Carrell is excellent, and the casting and characters overall were really good. It just didn't make me howl, and I want to howl, and most stuff that I can recall seeing recently, even the ones that I mentioned above, haven't done that (except Office Space).
As far as horrible comedies go, Borat and Scary Movie are at the top of the list, and Whitecastle was pretty fucking awful as well.

Well I haven't seen Hot Fuzz but Shaun of the Dead is nothing like Airplane/Police Squat/Naked Gun.
agwpt - it depends on your expectations I think. You can pretty much say that the Scary Movies are not GOOD comedies but if you're in the mood and know what you're in for there is a lot there that is amusing. And Borat did make me chuckle. How can it not?
