I have this chicken recipe that one of my grandmother's used to make all the time, and I learned the recipe and sometime make it myself, but it's tedious. So the other day I looked through the pantry and fridge and came up with a suitable alternative that takes 15-20 minutes:
Ingredients:1. Canned or fresh Costco rotisserie chicken.
2. Babigo steamed microwavable white rice bowl.
3. Frozen bag of peas and carrots, heated with butter melted over.
4. One can of cream of mushroom soup and one can of water.
5. Course ground pepper.
6. Rosemary.
Steps:1. Heat 1 can soup and one can water on low heat.
2. Shred canned chicken or one equivalent of rotisserie chicken (eat the skin instead of adding to pan).
3. Microwave vegetables and rice per package instructions.
4. When soup is creamy looking add chicken, and stir.
5. Break up sticky rice and add to pan, and stir in.
6. Add tasty amounts of course ground pepper and rosemary.
7. Stir in a cup or two of vegetables.
8. Simmer for a few minutes until thick and creamy.
9. Eat some and save the rest for later.
Note:You won't need salt at all for this as most of the ingredients have plenty already.

- my fav local traditional food ( a mix of bean sprouts, boiled egg & potatoes, tofu, vegetables poured with peanut sauces), sometimes i'd like to add tempeh over it. It's like a salad. We call it 'gado gado' here

a bit unrelated: I have seen patients with arterial hardening, what makes me wonder is whether calcium scoring is sufficient enough for early screening at young age. I want to crave asparagus soup(If I go to a big restaurant, I love this dish and I want to replicate it at home) and there is another soup that my grandmother used to make, but it is usually mixed with potatoes, cauliflower and carrots and the meat used is pork or luncheon meat (this may not be very healthy).

That's similar to what I used to eat about 30 years ago when I was just starting out in the cycling industry after getting out of the Navy. I used to mix Cheez Whiz in with my rice and tuna though because I hadn't thought of using tomato sauce.

My wife makes some great pecan muffins that the guys at work beg for every holiday. I forget how good they are till she makes them again. A stick of butter per every six. Brown sugar crusty goodness.
