I want to join the Dark Brotherhood - however, I dunno what civilian to kill - I don't want to break any quests by knocking off someone. Any recommendations for a 'safe' kill?

Join the Arena. The last fight classifies as killing an innocent, and you don't get penalized for it. But you do have to fight a nice sized number of matches before getting to him.

It doesn't have to be the last fight. I got an offer from them about halfway though. You just need to rest (as opposed to wait) at some point after hacking your way though a few opponents.

I am guessing ONLY if you do his quest, though. I didn't do the quest, and he fought back.

You don't need to have become Champion of the Arena to be approached by the Brotherhood. I only had half a dozen fights before they approached me. Might have been sooner if I'd rested more often.
It wasn't that I'd murdered an innocent, more that I was happy slaughtering people that seemed to bring me to their attention.

follow the shopkeepers from the market district, they all leave at the same time, on the same route. kill the last one, steal his key, and loot his shop. rinse. repeat. multiple times.

You've got to find someone that deserves it as well. I wanted to bump off Count Leyawiin, but he's essential. I thought about the flin trading dumner in the Imperial City, as he seemed an arrogant twit, but I settled on a petty racist in Leyawiin who wanted Khajits chucked out and 'Leyawiin for the Imperials'. I'd just wander around talking to randoms until you find one that seems annoying. Really essential NPCs have crown symbols over them and can't be killed.

Just go to a tiny village and kill someone if you're so concerned about it. Personally I just pick a person at random.

Do Mephala's shrine quest.
You have to assassinate two people during that and either will get you a DB invite.
