Ah, the eternal question!
There are a couple threads on this topic already and, of course, there is no right answer.
My personal favorite class is custom (Is that even a class? Whatever:erg: ), because I like being a fighter with a lot of thief and a little bit of mage. I couldn't find a ready-made class which quite had my desired major skills, so I made my own. I like using a longsword and medium armour, although I am tending more toward heavy as the game progresses. I sneak around all the time and use speechcraft a lot (you need it to make people like you and tell you things for quests). I don't use a bow very often, but I know of other people that just love their bow, so that's simply personal preference. As I mentioned, I'm not much of a mage, but I initially used a lot of healing spells and alchemy. The rest of them I simply trained up higher when I had more money. I use acrobatics and athletics all the time, because they increase simply from running and jumping, but you don't necessarily need them as major skills. I never use hand-to-hand fighting or unarmored skill.
No matter what you put as a major or minor skill, you can still increase the skill to its maximum value by practice/training. Your major/minor skill choices mostly influence how fast you level up. You must increase any combination of major/minor skills by 10 skill points to reach the next level. So if you choose "Axe" as a major skill, then never wield an axe, you won't level up as quickly as if you chose, say, "Long Blade" which you use all the time.
My favorite attributes are strength and personality
Okay, so those are my rambling thoughts on choosing a class - take from it what you can. :)
As for choosing a race, I really love the redguards. They are perhaps the strongest natural fighters in the game and give you a major advantage at the beginning of the game because of their nice special ability and high longblade skill. Dunmer (dark elves) are reported as the best mages and bretons have some nice magic qualities too. Both orc and nord make strong fighters. Khajits and wood elves are natural thieves. Imperials are an interesting mix, sort of thiefy fighters, or fighty thieves, or politicians; take your pick.
However, I think you should decide on a race based on which you think looks coolest. :cheeky: Any race can be become any class, so go with whatever you want to see when you look in the mirror! I think the beast races (khajits and argonians) are really nifty looking and they have a funky walk - be aware, however, that they can't wear shoes or closed helms (not that bad, just means you have less armor to carry around and might take more unarmored hits). As far as I know, people in Morrowind don't treat you differently based on your race. They call you outlander no matter what race you choose and your race doesn't seem to influence their disposition towards your character. There are a few gender-specific quests, but not many. Again, I have to say that my prefered method of choosing a character is based on how I want to look (or what part I plan to role-play). Don't pick a race you don't like simply because you think it would make a good mage or a good fighter. ANY race can, and will, do just fine in any class. The biggest difference will be felt at the very beginning of the game, but rest assured that you have total control over your character's development. If you decide halfway through the game to stop being a pure thief and instead become an axe-swinging fighter, no one will stop you! (Although it will take a few levels before you increase your skills enough to be very good at your new choice :) )
As for your birthsign - choose whichever one you like best. I like the Lady, myself, but I know many mages swear by the Atronach (it really is the best way to go for magic renewal - later in the game you almost never need to rest, so this sign prevents you from needing a load of magicka potions.) The one that lets you open up locks is fun and so is the invisibility one. Pick whichever one fits your playing style best, but remember, you can only use it once a day (except for fortifying ones like the Lady which are constant effect).
Good luck!

Have a look at the fairly recent 'where to start' thread on this very forum, too.
