It's air dried fish soaked in water for days on end, dipped in ammonia, then soaked in more water for days on end.
...and the question is, how the hell does someone come up with a recipe like that? Hey guys, lets do this horrible thing to a fish, then eat it!

According to the Norwegians I used to work with, lutefisk is mild tasting. Then again, they also told me that rakfisk wasn't bad if you follow it with a shot.
