I've only played it a little bit so far.
My initial impression is that the visuals are notably worse than Vermintide 1 - not because they are lower quality, but rather because there are too many special effects, harsh and bright colours, and heavy contrast (made worse by the automatic "eye adjust" that loves to make everything too dark to see after looking at something bright, which is pretty much all the time if you are playing the Bright Wizard.)
The UI is much worse laid out, unclear and way too busy.
All that stuff distracts me from the game itself. Maybe I'll just get used to it when I play longer, but right now it's bothering me.
Gameplay is pretty similar to the original, though starting from scratch again means that you start with a small choice of weak weapons. Many of the existing weapons that I've seen so far have been tweaked (Sienna's Bolt Staff no longer homes in on enemies :(), and some new ones have been added.
There also seems to be a new theme of having pre-placed bosses in many of the maps rather than places where tan-- rat ogres could spawn. Those bosses feel especially meat-shield-y even on the low difficulty, though again that's probably due to weak starter equipment.
I'll comment more once I've played for a bit longer.

I've heard some people refer to the Vermintide games as Warhammer flavored Left 4 Dead. If that's accurate, my interest is at least piqued.

That they are, though it might be even more accurate to call that "Warhammer-flavoured, mêlée-focused Left 4 Dead".
They have very satisfying close-quarters combat and much less emphasis on ranged weapons for the most part.

Seriously, though, when I think of L4D, I think of the way it makes it very difficult to NOT work together, with plenty of opportunities to get grappled and need help.

Yes, it has the same concepts of specials too, in this case rats with mancatcher poles instead of smokers, and jumping stabby assassin rats instead of hunters. The other specials are a bit different, but similar. There are Stormvermin, who are just much tougher rats in heavy armour, but also patrols thereof which will ignore you if they don't see you, but drop you into a nasty fight if they do, similar to witches. There's also rats with machienguns which target one specific player, and generally need to be destroyed by another player while the target hides behind something, which isn't really related to anything in Left 4 Dead.
Vermintide 2 adds a few more types, sorcerers who summon dangerous storms, sorcerers who grab you and leech your health, rats with flamethrowers, etc. - I haven't played it enough to get very familiar with them yet.
The other thing where it differs from Left 4 Dead is that each character is significantly different. They each have their own unique weapons, which give them slightly different roles. Some are better at holding back and controlling enemies, others are better at killing-priority targets, etc.; and each also have a set of weapon unlocks that let them change their role even more.
There's also the Bright Wizard, who doesn't use ammunition at all, but instead has to moderate her spell usage with venting heat or she will explode (instantly incapacitating herself.)
