I’ve recently started my first attempt at a thief fan mission, its set underground in sewers and caves. I’m really struggling to find enough light sources to use down there. I’ve already got the light bulb and a few torches in the sewers and several of the crystals in the caves. I was wondering if anyone had any suggestions as to what other light sources I could use or if people think that it wouldn’t be that big a problem just to have several ambient. I’m reluctant to use ambients as they just don’t make sense but Im starting to think that the missions in TDS did just use loads of ambient lighting.

You can increase the level lightness so it's playable without black areas (F6, or edit> Level Properties> ZoneInfo>ZoneBrightness I think)
Also, remember you can have sewers be occupied - so pagans and candles, as well as electric lights in the tunnels for maintainence.
You can have various types of gratings letting in projector-type lights from the moon/outside/street-level.
You can basements and generators and things so light spilling out of those.
Or the old classic thief glowing mushroom.
Also as you suggest you can use ambients and creative light placements to make the place appear brighter, especially if there's smooth surfaces, reflective surfaces or wet surfaces. Which in an underground/sewer type environment is perfectly possible.
And you can have Kurshock/ratmen with magic lights, pagan wisps, wraith-lights or simply people with torches.

Let me know if you want a smesh for a glowing mushroom, as I've made a couple. Since they're just smeshes, you'll have to add your own light and create scripts to put them out by whatever means you deem appropriate. I'm not set up to create a custom gamesys for that right now.

thanks for those ideas- anyone know where the pagan flying magic lights can be found? i found a willowisp in fx but im not sure thats it as i would have exspected it in actor class with the rat or somthing.

I could use them. I would rather make new mushrooms myself, but since I don't have 3ds Max..
