Hmm... I can't exactly remember how major/minor skills work with how good they are... but just think of all the skills you use in your everyday life, and make those your major/minor ones. endurance, acrobatics too! as for more detailed
Major/Minor:
long blade
heavy armor
medium armor
smithing
acrobatics
endurance
axe(if you want to be cool and use an axe)
then three more of whatever you want
Remember, pick skills you will actually use. If you wanted to be a hybrid (which would be more powerful) pick restoration and I think illusion, because clicky items get more usage with increased illusion skill.
As far as race, Nord is best(better than Orc) because they have higher resistances and some other crap I don't care about. The difference isn't large.
As for stats, STR is the key stat here, and whatever helps you hit mobs. Then health/consitution whatever.
As for 'what to do', firstly go find the uhh...

Oh, as for to why you would use a 2 hander, well, shields cover too much screen area, and you get more dmg with a 2hander. Damage is VERY key later in the game.

One key thing I would do if I started a new computer, is press `, type in
player-> setspeed 500
and
player-> setacrobatics 200
Would make the game much more enjoyable /grin. (and shorter to!) while not entirely making it super easy(it's already very easy)
with this combination, you should be able to do anything in MW at level 18ish if you have daedric/ebony armor, a daedric dai-katana, and some enchanted stuff heh.

How do you want to set Endurance as a major/minor skill??? Endurance is a attribute and not a skill.
I personaly think that a combination of Strenght and Endurance is best for the Attributes and certainly in combination with birthsign 'Lady'. This way you will have a starting Endurance around the 80-85 so you will get a lot Health while you level. So yoi realy want to max Endurance realy fast, so you will receive max health points while leveling.
I will choose only 1 armor that you are certainly going to wear. I always choose for Light or Medium armor.
Then I will choose for Marksman skill (to kill monsters from a distance) and besides that a 1 handed weapon with shield and a 2 handed weapon if you need to do a lot of damage.
But then again I need to say that everyone plays different and so everyone has other meanings on how to make the ultimate warrior char.

Yeah I know it's cheating, and after playing so many role playing games Idon't give a shit whether I'm 'pure' or not. I play single player games purely for enjoyment, not 'boasting' skills. So what if I don't have to spend 90% of my time(and if you do as much as I did, you WILL spend that much time) walking around wondering wtf I'm doing... I'm just saying that would be more enjoyable. Besides, unless you get a strategy guide, or like, are extremely careful, I see no way that you could beat Mw the first time without having to edit it, haha I remember when I looted then tossed some skull thing, man I was pissed once I figured out I needed that for A_Shitty_Quest_098..
Yeah, maxing endurance is a good idea because you'll end up with more hps... or does the hp adjust retroactively? I think it might, but MW's algorithms are so shitty it might not. Of course by the time you're at the level to where this matters, you're so godly who cares? /grin
Why not heavier armor?
Have you tried using a bow? I mean when I was more or less finished I did some cosmetics with Tuco and tried using a daedric bow with some daedric arrows, I set both my str and dex to like, 1000, and my archery skill to 1000, and my arrows were STILL very shit against the random guards I killed. Sure, it's incredibly easy to exploit with arrows (stand on beds etc) but it's so damn slow. As I remember it a while ago, it took like 3 arrows CHEATING with that 1000 crap instead of one axe slash (daedric axe, unenchanted) without cheating. Oh well...
1 handed swords are good if you want a shield, but you don't need it at the 'high end' (or lack thereof).

I don't like heavy armor (the Deadric armor is kewl tho), because it is so freaky heavy. Because of that you need al the strenght for wearing the armor. I rather wear a lighter armor so I can carry more "garbage" with me.
Dunno what you are doing wrong with your bow, but I am using a Deadric bow with Silver arrows. 1 hit (sometimes 2 hits) is 1 kill for me.
Now I am using the area effect arrow mod. Realy nice :cheeky:
uhm.....:erm: When you are cheating you are always godly :ebil:
And I must say that when I cheat with an RPG I am bored in 1 week. When I don't cheat I can play it for months.
And when you have a lot of experience with RPG's you know you need to save items (in your inventory or at a place you can remember) with some "special" names.

What enemies were you attacking? I landed myself fighting guards in one of the ... uhh... mages faction city things? Redoran? Hell I can't remember...
and yeah, cheating does make things boring if you make yourself godly. but having lots of speed only effects how long it takes you to get to a fight, not how quick you finish it =)
And hell, with MW's shit coding, I 'saved' some crappy items in some chest, went back to get it and had to kill the ... one of the fighter's guild! ta! Some stuff looks like A Waste of Space though, I mean, 'A Skull' really...

Dunno about your views but imo using console cheats in a rpg is cheating yourself as the whole idea of the genre is to develope your character by interacting with the enviroment.

I'm fighting those monsters in the wilderness (outside) with my bow, especially those flying things.
But when they get too close I switch to my Sunder to finish them off.
Maybe another idea:
Leave everything you find on its place, unless you realy can use it. That way you can always find stuff back if you need it for a quest.
btw cheating is cheating and there is no exception for it.
If you want to run faster from the beginning then choose the birthsign with the horse (can't remember the name) that gives you fortify speed 25pts.

I like to collect stuff. If it has a unique name or otherwise seems not so usual then most likely Ill stash it into my house. Happened already quite a few times that I stumble across a quest and all I need to do is to pop at home to get the item.

Anyway, depending on your level(the raising of the mob's level based on your level is capped off for creatures) it really doesn't matter shit if you can kill mudcrabs. I mean, Tuco can give one of those flying pieces of shit a dirty look and kill them...
As for cheating. Hell like I said I played MW not to say, 'omg omg I beat this easy game without cheating' No, I didn't play it for that. I played it so I could have fun. Excuse me if walking through the same damn place 20 times isn't my idea of fun. If you look down on me because I changed it so I could just fly past, then a hearty fuck you can be delivered to your door step.
Regardless, any half ass wit who makes a warrior class will find an unedited MW extremely easy. Boring if you don't like walking, but easy none-the-less.
I really think, knowing what I know, that I could beat MW without cheating if I never leveled up (pick skills for minor/major I never use etc), and just stayed level one. It's that easy.
