That's because
The Shining wasn't a King movie--t'was a Kubrick film. King hated what Stan-the-Man did to his beloved book.

When I think of King, I immediately think of The Shining, Cujo, Christine, and Creepshow, all of which were awesome. I have no idea if the Mist was any good (I suspect it's better than the story but not as good as the interactive fiction, which was awesome) and Lawnmower Man was a horrible film despite being completely unrelated to the terrible story it was named after. Otherwise, I'm not sure I could even name a King film, tbh.
Edit: Oh yeah, the film version of Carrie rocked too.

Cronenberg's adaptation of The Dead Zone was great. (Probably because he rejected King's script.)

That was probably thanks to De Palma's meticulous planning. Majorly under-rated director, Burn Out and Dressed to Kill are masterpieces, IMO.

King's own
The Shining TV miniseries was more faithful to his novel and in that respect I liked it more than the Kubrick movie. But when it comes to classic scare-the-living-shit-outta-me, the movie wins hands down.
I've never read Meyer's stuff; don't really care to.

Though I will admit
The Shining is a movie that's grown on me more with each viewing, there's something that's becoming ridiculously compelling about Kubrick's stereotypical tediously-slow-camera when it comes to horror.

Oh, I wholeheartedly agree. Kubrick always had strong ideas about what he wanted, and I'm not disappointed that the movie deviates from the book. His vision resulted in a very well-crafted movie, as was almost always the case.
