So you want some flavor? Aight, I'm a set you straight.
Go to the grocery store.
Buy Zatarain's Dirty Rice. 1 box
Buy 1 lb pack of ground beef. (Read cheap)
Buy a salt shaker size of any "Blackened" or "Cajun" or "Creole" seasoning. Something with cayenne pepper is the key.
Follow the instructions on the Zatarain's box. Basically brown your beef, and add a hefty dose of the cajun seasoning. Then boil some water. Add rice pack and your browned & drained beef. Simmer with a lid for like 25 minutes, and you have about 4-5 plates of deliciousness for cheap! :thumb:
15 bean soup is also real good and cheap. Find it near the bagged rice or bean section of your store. It's like $1.98. Find yourself a ham steak for about $3.00 and cube that into your beans. Don't follow the recipe on the bag. Just soak the beans like they say, and cook it slow with a crock pot for about 6 hours. With the ham steak in there. A couple pieces of cooked bacon in there also makes it delish!
These two recipes can get a single man about 1 week's worth of lunches and dinners. It's delicious food, and it's cheap. Look around for other bean recipes, as they are good and cheap.

If you're dead set on sandwiches, I'll say two things: 1) The bread might be the most important thing. Try different kinds until you find what you like. And 2) If you're worried about it being bland, find more flavorful ingredients/condiments. I like things tart, so I usually go for pickled banana peppers or an oil/vinegar mix.
This. I was going to bring it up. I make a couple soups over the weekend and freeze most of it and eat it over the week.
Also, you cant really get much cheaper or filling than rice. Invest in a monster sack of it, and find different ways to fix it. I tend to favor basmati but that might just be because its what I have a shitload of. You can make asian fried rice, indian rice, mexican rice.
Beans are cheap as hell, and highly nutritious. Seriously that shit is cheaper than ramen, and tastes a lot better. Best cooked in slow cooker.
edit: Eggs, also cheap as fuck (can buy like 3 dozen for less than 4 dollars). Eat them.

Spend about the equivalent of £20 - £30 on a decent knife.
It's pointless if you're not a pro buying a super duper bank buster but a nice good quality one really helps in the kitchen.
Get a decent, heavy bottom, 10" frying pan and a decent, heavy bottom 7" saucepan.
Don't buy sets, 'cos unless you spend a fortune they're shit, just get separates.
It really does make a difference having a bit of good kit.
