Now I like steak, but there are many meats I prefer; duck, oxtail (done right this stuff is heavenly), venison steaks and lobster. I love all seafood but lobster done well just takes the biscuit.

I totally agree, and it would depress me if I thought otherwise - since I'm not blowing $200+ on a Luger's night any time soon myself, and I'm currently relegated to the occasional trip to the butcher's myself for any steaks I eat (and you personally know damn well that my kitchen is rather limiting, but I don't let that stop me).
I did it more A) because I question his whole "I've had great steaks too" stance since he seems to be unaware of just what it is capable of even without sauces/rubs/etc, B) for other steak lover's edification (as SubJeff says, ignorance leads to poor choices), and C) since I'm already doing a pretty damn good Bubba Gump Steak impersonation, I may as well go whole hog.

At the end of the day, even without the super high end, steak is damn good, but there's still a level of preparation that most people don't conceive of when they go to their local Applebees.

What is it about Yanks and steak? Cultural thing? I always feel sick when I see a big chunk of not-so-well cooked red meat :eww:. But maybe I just had a bad experience with steak in past. But then if it's too well-cooked its not good either right :mad: .

RBJ - How long did you dry age for at home? I've gotten in the habit of dry aging for a week at home when I make a standing rib roast and it is an improvement, but I haven't tried longer.
