That video made me want a steak and I don't even eat beef.

Yeah, Alton fucking nails it and that is how you do steak.
My steaks are legendary.
On an unrelated note, some of you people (yes, Moyer, I'm looking at you) have foul eating habits.

What do you have against ramen?

Hell, that's how my family used to cook steak when I was growing up. Basically it's all about throwing it on a pan, and cooking it on high heat til the thing has shrank to a quarter it's original size. Always served hot with plain potatoes and a bone saw.
If you think I'm joking about this...I'm not. I come from culinary circumstances. If it weren't for my old neighbors cooking out all the time, I'd probably be a vegetarian right now.

I refuse to believe that any steak can be considered to be food if it doesn't involve either charcoal grilling or pan-frying with butter. Mmm, delicious, artery-clogging butter.
Damn, now I'm hungry.

The best way to make steak is on a charcoal grill with vent controls (e.g. a Weber) using a big, hot pile of hardwood lump charcoal. For a little extra smoke flavor, add a few pieces of hickory. And use an electric charcoal lighter. No lighter fluid or match-light crap!
I've cooked steaks in a cast iron skillet the way Alton Brown describes but I prefer not to unless I'm blackening it Cajun style. If you're stuck in an apartment where you can't have a grill, it's the best you can do. But the flavor doesn't compare to a charcoal grilled steak. And it tends to smoke up your apartment.
The basic cooking technique though is the same regardless of heat source: sear using as high a temperature as you can manage until it is appropriately browned, then reduce heat and slow cook to completion. On a charcoal grill, I sear it uncovered over coals hot enough to melt lead, then cover the grill & close all the vents to kill the fire and cook the rest of the way on the residual heat & smoke from the coals.
I can't stand steaks cooked in butter Ruth's Chris style. It kills the flavor of the meat. I can tolerate having a little butter basted on at the end, but honestly I'd rather just have some dry spices or maybe Montreal seasoning.

If you don't cook steak in butter(with a little bit of olive oil so you can get the heat up without the butter burning) how can you make a rocking cream sauce with a touch of mustard and peppercorns?
And just recently I've been putting a cube of the pheasant stock I've got frozen down into the sauce.
Man this rocks.
