The Title says it all - via Unrealedit, these files are not accessible, or I'm just unable to find the right option....

Search for UTPT (Unreal Tournament Package Tool) or Dragon Unpacker (I think that's what it's called). Those should be able to extract the sounds from the .U files.

Now, are there any lists - like a DX script - that state which characters speak in which file ?
I mean, I've listened through about 2400 files today and got part of what I wanted, but that'd make it much easier ;)

Believe it or not, no.
You can pretty much work it out by finding the requisite conversation in conedit and working out who has which line and when, but then conversation jumps and flagchecks come along and fuck the order up.
So, no, not really.

there's a toy out there somewhere called ConEdit, I think it came with the DX SDK, that lets you read/modifiy/create conversations. That ought to tell you who says what, where, in the first game.
If you can find it, of course: I only know about it because I was playing briefly with a conversion/mod project.
As for DX:IW? No idea for the scripts - no tools ever released, though I do vaguely remember hearing someone managed to bodge *some* of the stuff to work through the TDS editor (which has it's own built-in/bolted-on ConEdit type thing), but there's a toy called SoundDrone which will read the *.crc files (or whatever they are in IW) to extract the sounds.
