Why they're carrying alcoholic beverages: Were the crewmembers that irresponsible that they were drinking on the job? Or did they start after the beginning of the Many's takeover?
Also, I wonder what effect the alcohol has upon the hybrids/anellids(sic?)?

What exatcly are the hybrids anyways? Depending on what they are (Either a different species or former humans), They either stole the drinks or they had them when they became hybrids, or if Hybrids are another species that turn humans into Hybrids, They probobly had the liquor before being attacked by the Hybrids.
