Hi there!

I don't know but you can download the soundtrack from Thief 1 & 2 from different sites.

I have noticed that for example in Thief 1 the soundtrack of the "Horn of Quintus" and "Little Big World" is missing.

Why is that?

There isn't really an official soundtrack for thief 1 and 2. The best thing afaik are the soundtracks created by Child of Karras, posted here:

There's more tracks here, so if you're looking for something specific, you might be able to get it there
