Ahem... Personally, I find T2 much more enjoyable. Both games are great of course, so no need to fight me. Just want to say you can't say with 100% conviction that one is objectively better than the other.

Thief Gold for me. I prefer a more medieval Thief, and loved the supernatural elements. This one is gonna sound weird, but I prefer TG's graphics over T2: they're really gritty, the dark areas are far more intense than they are in T2...they're perfect for the type of world Thief is set in. The ambience too is a lot darker than the other games.
In terms of missions, Mage Towers and Song of the Caverns are also a great addition to the original T1 (only thing about TG is I really didn't like Thieves' Guild, I think it's one of the worst missions ever made). Another advantage over the other games is you can bunny hop (sure you can die if you go too fast, but they really messed it up in T2 I think).
I liked T2, but found it too Victorian in style (especially considering it takes place a year after T1), it's a bit too 'cheery' compared to the darker feel of T1/G, and not enough undead and supernatural elements.
I liked T3, despite its flaws. Has a lot of replay value, with respawning AI's, etc. But I think it fits badly into the trilogy, and the City is a mess compared to the others - extreme lack of continuity. I also couldn't play it until installing the Minimalist patch: when Garrett walks it's like he's knee-deep in molasses

I don't think it's surprising that Thief Gold is in the lead, it was a slightly upgraded version of the original that started it all. I know a lot of us hate that dastardly level that shall not be named, but it's easy enough to level skip.

Doesn't sound odd at all to me. In fact there was an entire Hires texture pack built for Thief 2 based on the premise of bringing back the grittiness of Thief 1/Gold, it's called the Necroage pack and it looks fantastic.

For me it was the great story along with the entirely unique look and feel of the game. There is also the fact that it is the first Thief game I completed. I played the TDP demo when I was a kid and enjoyed it at the time, but TDP and TMA seemed inaccessible when I was growing up, TDS had the handholding I needed in my formative Thief playing years.
Eventually I played through Thief Gold and The Metal Age, and I was forced to admit that newer isn't always better. Thief Gold remains my favorite game to this day, but TDS will always have a place in my heart, in all of it's flawed glory :)

I've never really been able to decide between Thief Gold and Thief II. TG had better level design and more of a variety in locations and enemies, while TMA had a better story and more of a variety in goals and play styles. I don't know if I can definitively pin down a favorite between them.
Can't comment on TDP, because I've only ever played TG.
TDS was also great in many regards, such as how it expanded on the Keepers, completed Garrett's character arc, and brilliantly pulled off one of the best horror levels I've ever seen in video games. However, I think its biggest downfall was the decision to make TDS for both Xbox and PC. Many of the issues people have with TDS, such as clunky movement (because we're controlling a character model instead of a camera) and small areas divided by loading zones (due to the Xbox's limited memory), would likely have never happened if TDS was designed as a PC-exclusive like its predecessors.
T2X is a beautiful campaign and stands as a testament of the talent and strength of the Thief community. However, I feel like it falls short of the other games in terms of story and level design.

I actually really liked the Thieves guild! Nothing like getting lost in those endless tunnels, only hearing thieves mumbling in the backround. Also it features some of the best conversations in Thief history.
