How were you able to tell that the hands had been removed/reduced?

Probably by looking, with eyes, but I'm eager to know too.

Before they reply, I hope they know the hands mainly appeared the most while crouching in the E3 video. They would disappear or pretty quickly disappear when standing. (Not good for me since I crouch about 95% of the time.)
So if the Gamescom demo had Garrett standing a lot, that won't help the diagnosis much. Although, I realize the hands being positioned lower on the screen or more out of the way would be a different observation; but it might be related.

You will be pleased to hear that the floating hands were tweaked quite a bit and don't disturb the field of view at all IMHO (even when just watching the game being played). This seems to be a case of fan criticism taken seriously [...]

[Cúthalion: IIRC the hands
were tweaked and this is also what we were told afterwards. Instead of being there all the time, they just rise up when Garrett starts sneaking and even then go lower again. You should only see them if you look down.]
The only thing I can add is that yes, there were enough sneaking sections in the mission so the hands would have shown up annoyingly if they had still been there. After all I was "looking forward" to that aspect. By new/not-on-YouTube I was referring to major things that would have been worth filming.

Mostly, because they
weren't there, when Garrett was in walking or sneaking mode. ;)
They showed for a second to confirm going into sneak mode, as far as I recall, then lowered out of sight.
Apart from that, you only see hands in context, fighting, climbing, searching or grabbing for instance.
Also, because in a conversation with a member of Square Enix the issue came up: Using a short appearance of hands when lowering body position as easily recognizable "feedback" that the char's "sneak"-command is being executed.

That sounds much better than having them in your gave all the time, and makes sense because as you go into a crouch you may use your arms to stabilise yourself.

Except for the obvious drawback that this makes Garrett much more feminine and utterly ballerina-like.

Also, a very unlucky development for all walking dead fans out there.

I've heard that if you press the thumbstick all the way it goes to the left Garrett will start spinning around like a ballerina.

John Sheppard, too. It's an outrage.
