I too am having these probs with my new card., Theif runs fine with DDFIX and 1 core turned off.
If I use darkloader and optimize, load up a fan mission it immediately crashes to desktop.
It damages the thief install so if I want to play thief after adding darkloader I have to uninstall thief and reinstall.
**** UPDATE
I shut down all direct 3D operations in the vid settings from the desktop as Dread Pirate mentioned, it worked and didnt crash to desktop but not only does the game look like crap but it also plays like crap too.

Still no progress for me....
I set the programs to work on a single core... Thief 1 just blacks out while the menu "machine" sounds grind away. For Thief 2, it just "empties" out the window, showing my desktop's image.
I used DDfix, no effect whatsoever. And then it started asking me to put the CD in the drive, even though it's already there. I put the ddfix files in their proper directories, applied teh DDfix patches, used the fixed EXEs, nothing. Black screen when the game graphics start.
I tried rolling back my nvidia drivers to 169.44, still the same. Absolutely *NOTHING* is working, short of just using a really old computer.
So yeah. No nvidia drivers work for me.

I tried the DDFIX executable, and now when I run thief in runs in "windowed" mode and tells me that I dont have Direct X 6 installed.
So Thief runs in a small windowed box.
WTF!

I finally got all the Dark engine games to run.
The only way I found to make them work was to use the DDFixed version + renaming the exe + launching them via windbg ...
How weird.
The problem was bad values in c:\windows\lg.ini !
