I have been enjoying Thief 2 on my Mac using Wineskin for years and have seldom had technical problems while playing through the base game, T2X, and various FMs. I have been rather behind the times updating my OS and only the other week updated to OS Catalina, whereafter I had an itch to play Thief 2 and was overjoyed to see that a new FM contest had been happening and I wasted no time downloading all the new FMs, launching Thief 2 and rubbing my palms together...only to get the message about how Wineskin no longer supports 32 bit apps on OS Catalina and above :wot::wot::wot:
Good news though! After some digging around I discovered an unofficial build of Wineskin and an engine specifically made to allow Wineskin to still run 32 bit apps on the newer Mac OS versions! I thought maybe this would be helpful to some other Mac user so they don't have to be deprived of Thief and other games, it is just about the same as using regular Wineskin but running this installation instead, instructions are on this website, but feel free to ask here if you are having trouble with anything. Seems to work flawlessly running my FM selector and Thief 2 with NewDark.

(oh and while the site seems specifically aimed at people wanting to play Windows games through Steam, this works for any applications you want to run, not just Steam, like a regular Thief 2 installation)

Does it support fog? In my experience, Wine versions have never supported it (not sure why).
I've had great success using Parallels on my macs. It seriously runs as well on my MBP as it does on my Windows desktop. Of course, you need to be willing to drop $50+ for parallels...

Fog doesn't work for me either I suppose, I've generally preferred to play with it off so I can't say I've ever tinkered with it to try to get it to work, but notably I noticed I couldn't get it to work for The Perdurance mission which recommended using fog in the readme file.

Can't say I've tried but I think this version of Wineskin should be worth trying, I can't think of any reason off the top of my head why it would work for Catalina and not for Big Sur
