I just got the Platinum Collection version of Thief II and, as the subject says, it freezes after about five minutes of play despite being utterly problem-free beforehand.
I've used TafferPatcher, which does not help fix the problem, unfortunately.
I have no problems with any other games -- just Thief II.

Try Alt-Tabbing out to Windows and making sure that the THIEF2.EXE file is only running on 1 CPU core - problems that far into a mission are wither due to an incorrect gen.osm file or the multi-core processor problems.

Not sure if this is the right thing you're looking for, but a ctrl+alt+delete showed a "00" CPU reading next to nearly every program other than Thief 2, which had a "25" rating.
I also right-clicked and checked the "set affinity" menu, which said that I was only running on one CPU.
Is this the processing...core...thing? How do I fix it?

Glad you got it working! For future reference, this is what I meant:
Find the THIEF2.EXE in the Processes tab of Task Manager. Right-click on it, and choose "Set Affinity..." You can then select which CPU core to allow for that Process. Unfortunately you have to do this every time you start the game, which is why the imagecfg program works much better.

The "Multi-core Fix" from Tafferpatcher should do exactly the same changes to thief2.exe as imagefg does. That's very weird that it didn't work for you but imagecfg itself did. Could you please post contents of Thief2\Tafferpatcher\Tafferpatcher.ini file?
