I think Gringos are how Mexican/Spanish/Latino people refer to anyone who isn't Mexican/Spanish/Latino.

By Spanish you mean Spaniard, no? 'Cuz calling a Latino a Spanish is a no-no.
But yes, it originated in Spain centuries ago and spread throughtout most (maybe all) Spanish speaking countries and, interestingly enough, Portuguese speaking countries as well.
It's pretty much a way to refer to non-Spanish speaking foreigners, but popular culture (and our proximity to the US) has made it into a more particular beast: to define -white- US people.
To be fair, though, a lot of Mexicans (like moi) use it just to refer anyone born/raised in the US, regardless of race/origin. Plus, in my particular case I also use it because I won't ever call them Americans (that's a whole 'nother can of worms), except when I'm visiting 'cuz I ain't too stupid ;)
A final note: despite it having a derogatory significance in many cases, mine is just a way to refer and differentiate the US crowd.

how about we dont refer to people regarding their skin colour or geographical location at all?
that would be cool
except for Mr Duck cos he is a dirty brown mexicano

He's gonna correct you about being part white-ish, so I guess you'll have to call him a dirty beige Mexicanuck in the future.

Duck's the color of the sweet maple syrup of his new home country. I think the official term for it might be khaki.
