Ever had bacon w/o nitrites and nitrates? To me, it tastes the same. It just does not keep as long. So what? There is a lot of “no added nitrates/nitrites” foods now available, but they use celery juice as a “natural” substitute. Uh, NOx from any source is the same... but if the concentration is lower, then OK. No matter anyway, I am going to die from the huge amount of asbestos I was exposed to while doing brake jobs back in the 70s and 80s. Also the excessive amounts to trichloroethane fumes + all sorts of other solvents and whatnot. Screw it. I'm having some full fat bacon! I guess it is just part of My Generation. ;)

Eehhh, I like bacon from the local butcher no matter what it is he's done to it (ooh err)

I prefer a butcher that does not pork the bacon.
