Chocolate Truffles
300g dark yummy proper chocolate (preferably 100g of it being Maya Gold)
1/4 pint of double cream
2 oz butter
Coco powder
Put the double cream in a little saucepan and bring it gently to simmering point.
Meanwhile chop up the chocolate and butter into little bits so that they will melt easily, and stick them in a bowel. (better make that a bowl if hygene is an issue)
Pour the hot cream on top of the chocolate and butter and stir gently until it is all mixed together and gone smooth and shiny.
Leave to cool (3 hours)
Get a small spoon and scoop out little chocolate truffles from the mix. Sieve coco powder over the top.
stick em in the fridge for as long as you can hold off and enjoy 8o)

Spinach Artichoke Dip
by Carini
First defrost 1 package (10 oz) of frozen spinach and rinse
Mix together 1 package of cream cheese, 1/2 cup mayo, 1/2 cup sour cream add as much of your favorite grated cheese (romano, parmaggino) as you want.
Then add the spinach and 2 partially drained jars of aritichoke hearts.
Chop and mix the whole thing up with a hand blender until partly smooth (you gotta have some artichoke chunks and decent sized spinach pieces tho)
Pour into a baking dish (or bread bowl!!) and top with crumbly bread or, my favorite, shredded montery jack cheese.
Bake 350 for 20-30 min or until cheese on top begins turning brown.
Serve with big pieces of crusty bread or tortilla chips..
