Okay, this might be nitpicking and all, but I don't like how I'm now in the Mage's guild, the Thieves guild and a Companion. My character is by no means a mage, but it required next to nothing to get in. Thieves guild I didn't even realise I was joining, when I did the first quest.
I see why Bethesda wants to have everything possible for all players, but I think they should at least tie some stuff to skill-level. Having to sacrifice some paths does not make this game a corridor FPS. Instead, it would have been awesome if the mages guild for example, had different quests for non-members (help with searching ruins etc.).
I'm not actively trying to avoid Thieves guild/mages guild missions, but this is something I think would be Bethesda's job.

After a day of playing Skyrim, I realised the game offers so much stuff to do that I should not jump at every opportunity to do a quest. Just do what you feel your character would do.

I was just talking about this very thing with a friend yesterday.
I absolutely loved loved LOVED the fact that you could not rise to the top of every guild in Morrowind because you were restricted by stats that each group required you to have to move up the ladder. And it was not very easy to achieve all those stats (without cheesing it), at least not the higher levels. Playing a thiefy character and leveling all the thief related skills meant that you were probably not going to be able to rise to the top of the Mage's Guild. It absolutely encouraged multiple replays to experience all the content, and I thought it was awesome.
Then Oblivion came along and decided that it would be fine for you to be chief of everything in one go. It's not a secret that I didn't care much for Oblivion, but this was just another thing that made me never want to play through it a second time - I'd already been in charge of everything.
Skyrim is following that model, and while I'm trying to play my character by ignoring guild quests that she wouldn't participate in, it annoys me that I'm stuck with quests in my log that I can't even abandon because I don't want to do them. I showed up at the Mage's College in my full thief gear with daggers and bows and they were all happy to welcome me with open arms. I'm sure if I continue the quest line I'll eventually be running the place, despite never having spent a single point in Magicka.
Fortunately Skyrim is a great enough game that I know I will enjoy future playthroughs, when I decide to make my mage. And I'll continue to ignore the quests that I don't think fit my current character, but I wish I didn't have to do that.

There are too many grindy skills for me to really consider having to replay the game to see all content as a good thing.

My plan is to see through as much of the main storyline as I feel like doing (probly 60-70%), basically until I am sick of my character(I estimate at least 100 hours of gameplay), then I am gonna lay off it for a while, until the New Year at least.

I don't have the time to do a replay (barely have time to finish a straight run through). Being able to join as many factions and complete as many quests as I can in one go is a big plus for me.
