From what I've gathered, non-jury trials happen when neither side wants a jury. In criminal trials, the prosecution wants this to save time, and the defense wants this if they think they can plea bargain. In corporate trials, it's because jury trials sometimes end up with outrageous numbers exacted from the losing side.
It's pretty weird that one ended up with a jury verdict and one with a judge's verdict. I guess that reflects differing strategies from Apple and Google's legal teams.
