Not sure what you're saying. I don't want the game to play itself - that wasn't necessary for MOO1 or 2. I found that with MOO3 the more successful you were the game became exponentially slower to play. That killed the enjoyment for me.

I'm tempted to buy them all, but apart from the oldest Ultimas, I've already got all these games on CD. Does anyone know how easy it is to get Ultima Underworld 1+2 to run on a modern computer though? And do these GOG versions normally work with just one (double-)click and you're ready to play?

Pretty easy, as long as you are reasonably familiar with Dosbox in the first place. You just need to set your cycles to around 12000 or so and it's good. (Too fast and the movement is wonky). GOG versions of just about any Dos game is simply the game with a preconfigured Dosbox config.

Not exactly a useful workaround. Most non-US users don't have US addresses. I'm assuming that the billing address also has to match the credit card, no?

Not that I can tell. I've bought a fair lot from 'em already, and no transaction's ever been declined because I don't actually live at Beverly Hills.

Err wouldn't that fail miserably as soon as you go to the "please provide the billing address that matches your CC" part?

Just to reiterate, they don't check it. I actually bought stuff this way (hungarian credit card, US billing address), so it works.
