Since mods are so easy to use in Morrowind, and there are so many cool ones, how about a thread where everyone lists their 'must-have' plugins. And, it would be nice to link as many of these as possible.
I'll skip the official ones for now, as they are quite common and familiar.
Here's some of my favorites:
Shakti's Temple Fences (puts fences with lots of money at each of the Divine/Almsivi Intervention points)

Femalebody 1.1 (No, it isn't a nude patch)

http://thelys.free.fr/motoki.htm) NPCReplace 3.0 is an essential IMHO. It replaces the nasty default NPC heads with Rhedd's as well as some other community artists'.
That and a difficulty plug-in like Morrowind Advanced and Wakim's Game Improvements should do just fine.
I am personally not a big fan of the GIANTS plug-ins. They're well put together and lots of people like them, but I think the artwork on the added creatures is pretty hit-or-miss to say the least. No offense to anyone involved in it. Just my personal opinion.
Animal behavior is another good one, and many of the sound and dialog improvement ones are excellent, though I don't have a list of which ones in particular in front of me.

Yeah, if you download that one,it includes the Modern Adventurer office. So you can go and slaughter *ahem* VISIT, Striker himself in his offices whenever you want :sly:
I second kathode's opinion about the NPCReplace. Just loaded that one up myself, and it is excellent. It doesn't make male Bosmer any less annoying though. I also use the Pretty Faces mod for my own character.
Female armor mods good as well, there are any number of them floating about and they make the game so much better if you've got a girlie character. Who wants to wear ugly androgynous armor?

Back when MW was actually fresh and new, and all you wusses were still in Balmora finding that naked rodent guy, I was trouncing Vivec and Dagoth Ur at the same time, and I was having sex with Azura and killing Dragons...

Oh yes I wanted to design a mod that had the best character ever(me) in it with all his equips and stats.
I just needed to design an entirely new non-exploitable AI which would rivel even the greatest supercomputers to come to a small fraction of my intelligence and ability and ... uhh
Well my NPC tuco was going to kick all your asses, and since you all need a good ass kicking, my mod I never made is a must have...
In fact, someone design a mod with Tuco in it. Maybe you'll get lucky and come close to the power that is Tuco.

There are Scribs (The white ant type creature that paralyze you) or Kwama Foragers (Those 'slugs' with three eyes and teeth.). I assume you mean Scribs then. ;)
