I'm trying to talk to statues (the ones in the Daedric shrines) but none seem to want to chat.
Did I cheese them off by "borrowing" their diamonds, rubies and such?
Any help would be appreciated ;)

I don't think that stealing the diamonds makes any difference, it's just that most of the statues simply don't talk.

Keyword: Most.
Only one statue for every Daedra god worshipped will actually talk. They will give you a quest (believe me when I say you'll really like the rewards.) A few act as shrines that you must 'talk' to (namely for the Four Corners quest for the Tribunal Temple. Not sure if there are any others.) They don't give you any benefits like normal shrines. ;)

One 'special' statue (the one at Bal Fel, IIRC) actually has two purposes. (The 2nd being the vamp cure)

The location you're referring to is Bal Ur, I think.....
Is that the same statue for both the normal Daedric shrine quest and the vampirism cure quest? I'm pretty sure there were two different statues of that particular Daedra Prince, one for each quest....

Right, I was thinking of the wrong two quests; the vampy one and the "normal" Daedric shrine quest, where you get the nice artifact as a reward. The latter must be the shrine in Yansirramus (quite possibly wrong spelling, but for once can't be bothered looking it up)
