To preface, yes, almost every mission has a set load-out, and you can only use money gathered in the previous mission to buy the available equipment. My question is a general one: What pieces of equipment do you usually go for? As a followup, assuming any amount of gold and a large stock of all items (within reason, you're not ever going to have 50,000 gold to buy 100 gas arrows), what is your ideal load-out?
Personally I stagger between moss and water arrows, and finish up with flashbombs and healing potions. Though I always make sure I have a rope arrow or two, though the game is pretty good about providing anything you may need within the mission itself. If I have LOTS of gold, I'll splurge for a gas arrow.
Also, I'm not just asking out of curiosity; I'm trying to figure out what equipment I should put in my pre-mission store for an FM I'm working on. No sense putting up Mines for sale if no one's gonna use them, right?

This really depends on the kind of mission you're faced with, with the most important question being "Will there be human AI, or undead?"
In general, I usually buy every single water arrow. A few moss arrows. A few flashbombs. And a gas arrow if it's available. Maybe a 2nd one if I have lots of money to burn.
If I'm facing undead, (in addition to the above, sans gas arrow) I might buy a mine and fire arrows and some holy water of course.

I think that extra gear is some kind of cheat making the game easier so take none.

I never buy flashbombs or healing because I just reload if I get caught or hurt. Other than that I usually make sure to have at least 8 water arrows, 4 moss arrows (and hope to find more later), and 3 ropes. If there's invisibility potions, gas arrows or speed potions I make sure to buy those as well.
But I know not everybody is ready to go through something so tedious as reloading after every mistake :)

I go for all tips and clues you can buy, then get one healing potion and a few moss and water arrows.
Equipment diversity becomes important in large, complex missions where you can adopt different approaches to your targets. That's where a well-stocked equipment store goes a long way.

If it is a normal human mission I normally get some flashbombs, gas mines and gas arrows. Also extra water arrows and atleast an extra rope arrow. I usually don´t get much moss arrows, they often not strictly necessary and they are quite common to find. Sometimes I get flares, clues and obscure stuff like forgbeast eggs. As this is a human level I stay away from fire arrows, mines and such.
If the level features a lot of undead I usually get lethal. That means mines, fire arrows and health potions. Also I get a lot of flashbombs and special potions if I can get them.
If I want to ironman the level I get quite a lot of flashbombs (they are cheap and you can easily knock your enemey out or run away) and silent takedown weapons like gas arrows. Also atleast 2 healing potions because I usually get hurt.

I buy all water arrows and a few moss arrows, and one gas arrow if I have the gold. I almost never buy healing potions, and only buy flash bombs if there are undead. I'll also get a few broadheads if killing is allowed and I'm in the mood to play that way, although most of the time I'm a knock-em-all-out kind of player.

I usually buy all tips as well, in addition to more Water Arrows, Rope Arrows and a few Flash Bombs. The key here is to have a bit of everything to suit many playstyles, so adding in Mines or Speed Potions can be a good idea.

If holy water -> "oh no, zombies". Buy them all.
+ 2/3 moss, because too many nobles love that clicky-clacky tiling.
2 rope arrows total.
As many water arrows as possible.
Mop up the last 25g with a broadhead for that annoying spider in the basement.
