I was really worried when they started disapearing as well so i stopped doing that.
I'm quite excited about the witchgirl adventure from Emma's site. Also, i found a quick and easy way to populate my house from uhs:
[SPOILER]placeatpc "name of whoever it is you'd like round for tea" 1,100,0 summons a copy of that person right infront of you.[/SPOILER] (This is probably really common knowledge but oh well.)
I now have my own guild guide, transport to mournhold and transport to solstheim in my house. And, i spawned vivec on my bed. He looks so great floating there! [insert own god in bed joke here]

Yeah, NPCs have a habit of disappearing. You need to wait until they've stopped following you, save, then sleep. If they're still there afterwards, then they aren't going to disappear again.
