I have finished this game once as the with standard weapons, shoot everything kind of play. Any suggestions for interesting but not too difficult character builds?

Why not try the other two builds the game itself suggests to you?

go in with less weapons evey time. Then when you're ready, you can try pure Psi & wrench only.
then, if you survive, try again in Impossible mode.

Try the game without cyber modules.
And, to be honest, the three builds that the game offers don't really make much difference later in the game.

They do if you follow them. Obviously nothing you do early in the game makes a difference if you drastically change your upgrade strategy.

Marine and Navy seem to lead to a similar character from my experience, but OSA is another story.

Nah, Navy gives you kind of a "Ranger" character who can hack and shoot and maybe uses a little psi on the side. The Marine path, if you really stick to it, gives you a mindless killing machine.
