@Bikerdude (and/or anyone who can help)
At last I ordered the computer. It is composed of these components: (among others)
AMD Phenom II X4 955 Socket AM3
Gigabyte GA-MA790XT-UD4P
OCZ OCZ3P13334GK Platinum DDR3
Sapphire Radeon HD 4890 Vapor-X - 1GB
But after waiting 2 weeks it seems the that particulr memory is no more available, so I thought to change the motherboard with a Gigabyte GA-MA770-UD3, which supports DDR2 memories.
I would have much more choices among the various memory availables, but still I have more doubts than before.
I've read a lot of stuff about frequency, latency and such, but I still don't understand what really does count.
To make it short, what should I prefer between i.e. these two: (regardless to the price)
OCZ 1066MHz CAS5
OCZ 800MHz CAS4
or after all it's preferable to keep the previous MoBo (DDR3) and one of these:
Corsair 1333MHz CAS9
Corsair 1600MHz CAS9
OCZ 1066MHz CAS7
of course, they are all 4096MB (2x2048MB)
And....about all those fancy dissipators...gold, platinum, titanium and so on......are they really useful?

DDR3 memories
- Corsair PC10666 1333MHz CAS9 dissipatore DHX Technology = € 98
- Corsair PC12800 1600MHz CAS9, dissipatore DHX = € 101
- OCZ PC8500 1066MHz CAS7, dissipatore Gold = € 108

In fact the GA-MA770-UD3 doesn't seem bad at all to me. It's the only one with socket AM3 which supports DDR2 memories, the others are AM2+. It doesn't support Blu-ray playback, it has 6 SATA nsead of 8, but ts not a big problem.
Anyway, this is the site: (I changed it, beacause it seems that the previous one wasn't very reliable, while this one is the most trustworthy of all the Italian on ne shops)

All AM2 boards support DDR2 memory. You are perhaps thinking of DDR3 memory, which AM2 boards do not support (it was still pretty darn expensive last time I looked mind you).
