It occurred to me after I posted that growing up within spitting distance of the oldest Chinese community in Europe probably means our Chinese food is a cut above that elsewhere in the country.

I didn't. I said that individuals' opinions made up consensus, not that mine represented it. I was just saying that it's kind of pointless saying the "your opinion isn't absolute" line, since it's kind of assumed in any kind of opinion. Saying that I can't support it as a law set in stone is kind of redundant, because it's just my opinion. SubJeff says he agrees, you say you don't, and so the whole process continues until at some stage, there is a consensus, but even that is meaningless to individuals, who can choose to disagree with consensus. My point is that the prevalence of outlets selling food I find to be shit, hints that the consensus is that shit food is acceptable. It should be obvious that I mean shit food by my own standards, not some golden rule.

There are hundreds of Chinese take-aways and restaurants where I live (Southampton), but only about 5-10% know that chow mein is near inedible if the noodles are so soft that they disintegrate while you eat them.

Seeing as you are vegetarian I don't think you can really have an opinion on international cuisine since you cannot and do not eat most of it. Certainly your reflections on the quality of Chinese food in Liverpool, whilst probably true because of the pedigree of the area, in isolation would be next to worthless since Chinese food incorporates a vast array of meats even in dishes that aren't really "meat" dishes like rices, noodles and even vegetable dishes.

A Britishism I picked up is saying dodgy more often than sketchy. Sketchy sounds too much like a guy in the shadows plotting evil for all we know, whereas dodgy is more general... There's just something wrong about this guy. He's dodgy. I'll find myself saying brilliant & cheers sometimes too.
