I hear people talking about building strongholds and stuff, whats the deal?

You can join a Great House (one of three- Hlaalu, Redoran or Telvanni). As you advance through the ranks, you will be able to have a stronghold built for yourself.
You can only join one great hse, so think before committing yourself to one. But do join one- it's fun to have your own home, and you get all these quests to do.

I was thinking hlaalu, because it's right there in balmora.
is a stronghold just a house? like any other house? what purpose does it serve?

Broadly speaking, Hlaalu are for thieves and sneaks, Redoran for warriors and Telvanni for mages. But it doesn't really matter. Some argue that Telvanni have the best quests, but I joined Hlaalu (because it was right there in Balmora) and haven't played any of the other houses yet.
The stronghold is a walled homestead in the middle of nowhere. You get your own house, a couple of houses for retainers, your own bed to sleep in. You also get a couple of retainers in your own home, and they'll sell you stuff (lockpicks in Hlaalu). I think there is a trainer somewhere too.
You can keep stuff you accumulate in your stronghold- you'll have so much tat soon enough you'll need the space.
Just don't put stuff in containers that had anything in them. The contents of these respawn and you might lose your stuff.

where is the main redoran stronghold. Is the one in vivec the only one? I just hate vivec because it takes forever to get anywhere.
but anyway I'm more of a fighting character than a sneak character so it sounds like redoran would be better, if it's not too far to travel to do the missions.

Redoran centre of power and their council house is in Ald'ruhn.
Your stronghold doesn't exist yet- it gets built later. The one you get from Hse Redoran is (will be) at Bal Isra, not far from Ald'ruhn.
As to distance, you do get to do stuff all over. Travelling cannot be avoided, I'm afraid.

Hrm... it usually took me ~10-15 seconds to get there from Ald'Ruhn, using my mach-500 flying ring (created via the editor), to get there; on foot, usually ~3 minutes. It's in a nasty section of the Ashlands though, which makes landmarks dodgy and interfering critters plentiful. I'd have to say the Redoran stronghold is my least favourite in terms of architecture, as well. :p
