I see that Ultima Underworld is coming from the earliest editions of Dungeons & Dragons, where management of resources and weight of loot was the main thing to do instead of optimizing character stat builds. However in Ultima Underworld there is no surface world to bring carts of gold to. I have no more space for loot, I wonder if I can store items on the floor, or in the bag on the floor, and it will be there after I come back some days later?

As far as I remember you should be fine. Underworld (and Underworld 2) save the entire contents of the game levels including items left on the ground when changing levels or saving your game.
