These are what I use with the Xbox. They're fantastic for the price.
Yeah. Pretty nice connectivity options, too. I use them for the computer. I wouldn't've minded Klipsch, but the Promedias weren't available, and anyway the bass the system belts out makes people's ears melt. Doesn't make you too popular with the landlord, though. :D

Stereo. Never have I managed to arrange 5.1 speakers and cables in a room without it being stupid.

I have the same problem :p
I use stereo right now, I was mainly asking to figure out if it'd be worth it to have our coders incorperate surround sound into a game... It's really looking like it'd be worth it... And for the type of game, I think it's be stupid not to anyway..

Are headphones stereo with EAX and shit?
There's only two speakers right? There you go.
I don't wonder if all this surround malarkey might get some competition from good (
http://en.wikipedia.org/wiki/HRTF) HRTF rendering one day. Well for games and headphone things anyway. Movie theatres are a little too hit and miss in the seating.

I got a shiny new (
http://www.jamo.com/Default.aspx?ID=1424&M=Shop&PID=17179&ProductID=18011) Jamo DMR 61 for Christmas, which I've connected to my PC with an optical SPDIF cable. It's perhaps a bit overkill to use it just as an amplifier, but if you want hi-fi sound for your PC you don't have much choice. As RBJ has pointed out before, analogue amplification is out of the question.
Anyway, it's actually a 5.1 system, but I could only carry two speakers with me in addition to the DMR 61, so I'll have to vote for stereo.

Where's the option for both? I have my 5.1 setup, but a lot of the times it's more prudent to use the headphones (and I like using them better, I suppose).

I use Sennheiser HD 595... They have a very wide soundstage and X-Fi's "headphone surround enchancer", or whatever it is, makes them sound pretty much like 3D, especially in games.
I also use a pair of some old random Estonian Audes 130(?) speakers. They are quite large (about 65x28 cm each), and have a nice big bass especially when boosted with amp & X-Fi.
I used to have (and still do) a 5.1 speaker system (Labtec Arena 685), but they have pretty bad sound quality so I don't use them anymore.

I'm still using an old set that was new when Windows 98 was fresh, new, hip, and cool. They have a neat button that says "3D" on them. The button is supposed to fool you into believing you have surround sound. I never use it, because it makes them quieter. My brother promised me a full surround sound set then he sold it.

Nice to see other (semi) high-end headphone users are out there....I've never met anyone offline who uses these things.
