So let's take Crysis for example.
I have a retail, non-steam(as in, it doesn't require Steam unlocking etc.) version of the game.
If I were to get Steam, is there any way for me to add Crysis to my games list? Actually add it as a game available on the Steam platform on my account, with being able to download it later on and whatnot?

Oh shut the fuck up you big baby. Companies that allow registration on Steam do it out of a business decision; there is neither the bandwidth nor the financial ability to be able to register every fucking game ever on Steam.
Not to mention it'd open the way to easy piracy. Torrent Borderlands, tell Steam "HEY! BORDERLANDS!", Steam looks at it and says "yup that's some Borderlands" and gives it to the torrenter free? Fuck off- there's no such thing as a free lunch.

Isn't it true that if you have a fresh never-installed copy of a store-bought game, that's also sold on Steam, you can put that CD key into steam and it becomes part of your Steam Account? I am fairly sure I have done this before, and that Steam's interface allows it, but I can't think of an example.

I haven't heard of that, but there are a handful of games you can buy in a store and activate on Steam later. Or at least there were.

Yes, I did that with Killing Floor retail version. It auto started steam, prompted for key and asked if I wanted to install by disc or by download. Just like any Valve game. Killing Floor is not sold by any other service as far as I know. Tripwire is the developer.
Rereading the above posts again. All you need is the key and it can activated to be downloaded later. Your choice.

And of course if you have an old pre-Steam version of Half-Life 1, put the key in and bam- you get all the official HL1 expansions as well as the official multiplayer mods like Counterstrike 1.6 (no Condition Zero though) and Day of Defeat 1.3.

Well, yes, but they do have Crysis in their offer so it's weird you can't do the CD-Key registration thing. Neither can you do it for Call of Pripyat and Cryostasis, and these are in their offer too.
And I didn't buy Metro 2033 from them either, and I could register it just fine (Yes I finally sold my soul to the devil). It just seems inconsequential to me.
[Edit] If I add the non-Steam games to my games list via the add shortcut thing, will they show up to other people on my games list?
