Does stat escalation work similarly to how Morrowind works?
IE: if you use a bunch of strength skills when you level up, you'll get +5 strength option?
And the highest you can get is 5 in one stat, and 3 in two other stats?

I'm not actually sure. The most I've gotten was a +3, and even after I levelled up three times in a row (I didn't know I had to use a bed...) I was still getting +2 modifiers. I assume it is similar to Morrowind though. Raising skills past the required amount for a level up will give you modifiers. Possibly.

I've gotten a +4.
I think it's really annoying they did it the same way though, it means I have to micro-manage and go out of my way to raise certain skills enough to ensure that I get a 5/3/3 modifier in the skills I want. It'd be hard for me to 'naturally' get a 5 in one stat since I'm using virtually all my skills.
I don't know if I'm too far ahead, but it's been really time consuming to kill things lately. I've been fighting those clanfears, and it takes forever to chop them down.

Don't worry, I've had the same problem. It was strange. In the beginning I was thinking, "This combat isn't that great. It's far too easy to kill things."
Now Clannfears and Zombies are attacking me (and these zombies are FAST), as well as multiple enemies. It's just crazy and I end up getting beat up pretty badly. I was determined not to use magic, but now I'm forced to use healing magic because potions are too expense and gold isn't as plentiful.
(Oh, what level are you? I'm 6 right now. Should have a lot more levels under my belt later tonight though.)

Did you uhm, have multiple levels saved? IE: had more than ten skill ups since your most recent level up?
I got a bunch of +5's once when I had 30 points trained since my last level up. I'm not sure if that happened in Morrowind as well, but you rarely ever save your levels in that game because you sleep more often.

It seems to work very similarly to Morrowind.
I've managed to get 5/5/3 simply by not sleeping for a while, and I'm doing very similar to what I did in Morrowind.
On the otherhand I managed to buy shit from vendors and sell it back for more than it cost in Morrowind, so all I had to do was find the master trainers in skills that raised attributes I wanted to increase and sink money into them a couple of times and I think I had all my attributes (save Luck) maxed under level 40. In oblivion (since the've put training caps per level) I've just been over using certain stats, and have a lot of commonly used stuff (block, athletics, aerobics, etc) as minor skills so they keep going up but make me level.
