Another vote for Jedi Academy and Jedi Outcast. Those were a lot of fun, and felt a good bit more modern than Jedi Knight. I think they still might hold up well.

Graphics are dated, gameplay is still golden. Academy is still my favourite Star Wars game, with LEGO Star Wars II: The Original Trilogy a close second.
The Force Unleashed is decent at times, mediocre otherwise. The best parts of the sequel are mediocre. A pair of not very memorable games.

I really enjoyed Shadows of the Empire back in 1997 on N64, but I can't imagine it's aged all that well. Still, there was a PC port, and you do get to visit Hoth and Tatooine and fight Boba Fett. Speaking of N64 games, Episode 1 Pod Racer was pretty good as well, at least in my memory, and that has a PC port, too.

Another vote for Republic Commando here, it was surprisingly decent back then. KOTOR2 is an obvious choice as well. First game was good with all the story twists, but only with KOTOR2 I thought you can really have an adult story and dark themes in this universe. Bugs and cut content aside, I still value it much higher than KOTOR1.

If you're going to play the Dark Forces series then just play Jedi Knight 1 and Jedi Academy. Dark Forces is a boring Doom clone and Jedi Outcast has utterly garbage map design. Jedi Outcast is held in high regard for the MP, the SP campaign has some of the most woeful maps in a PC FPS since the Hexen series.
TIE Fighter is fantastic. X-Wing should totally be skipped. Buy it off GOG, not Steam, since GOG has the best version of the game available.
