I started getting occasional crashes in Dark Valley, but I'm getting great framerates, around 40 - 60 FPS in heavy fights, running at 16xAF/0xAA, 1024 x 768 with max settings (except grass shadows).

I can't use dynamic lighting :(
It runs just fine in a few areas, but most of the time it gets down to about 1 frame every 5 seconds.
I get great performance on static lighting though :p

And my rig is not the state-of-the-art
It's still pretty high end though. I have a P4 3Ghz, 1 gig of ram and an X800XT which I would call a high end but perhaps a little dated system. I've yet to find a game that I can't run on at least medium/high settings.

From commercial point of view my setup is mid-range today. More or less. True, I have a motherboard that is designed for a double processor (it was me who requested a single core in the setup... I didn't want to have any problems with Thief, System Shock, UFO and such :)). I could just toss in another AMD 64 4000 processor, upgrade to X1950 (I'm waiting for X2000 series though) and I'd have a true high end system.
But what for? As you do, I can play any damn game at max settings. I still want to see how Bioshock will perform on my rig, though.

A system with a Pentium 4 and a card that can't max out Doom 3 make your system around medium-end. ;)

Can you run stalker with dynamic lighting on your x800xt?
I've got an x800pro, but I could unlock the extra 4 pixel pipelines to make it like an x800xt. I'd really like to be able to run this game with dynamic lighting.

I can run it with full dynamic @ 1024x768 with an x800 gto but it took some tweaking

Yeah, I can run with full dynamics and most settings around medium. I've done some tweaking of stalker though, and a lot tweaking the OS. I do still get some stuttering though and the arena tends to run like shit for some reason. As for running Doom 3/Quake 4, I run it on high settings with some AA/AF though I can't go for the ultra settings which give you a warning about massive texture sizes before you enable it. The same pretty much goes for Oblivion, though the frame rate I get outdoors often leaves a little to be desired, still very playable though.
Just checked (
http://www.tomshardware.co.uk/graphics/charts.html?modelx=33&model1=566&model2=591&chart=211) this link and it looks like my cards actually got your X1600XT beat on Oblivion and Half Life 2, you've got the upper hand on Prey (Doom 3 engine) and 3Dmark and your spec is generally better than mine.

Yeah, the X800XT is a pretty good card. Before going for X1600XT (along with X1800XT it was the best on the market for Ati at that time) I was considering an X800XT.

I think people should rather go with X1800 or X1900 series nowdays though, X800 is quickly showing it's age.
