If you open up the crf files in an extraction program such as WinZip or 7zip, you can just extract the background image, if that's what you're looking to have.

It'll most likely be a combination of files within intrface.crf that you'd want - but it's probably not exactly what you're looking for as certain text will be missing.
There may be a better / free tool but the trial version of (
http://www.bugshooting.com/) Bug Shooting will allow you to capture the menus. (Fraps which was my first thought works in-game but I couldn't get it to work for the menu screens). I tried a couple of alternative methods but didn't have much luck - possibly because I'm on 64 bit Windows 7 or perhaps because I'm just tired. If you try Bug Shooting then just run it and press printscreen as normal. It will then allow you to point to an image of the SS2 menu screen which you can then click on to capture.

Running the game windowed with ddfix and then unfocusing the game window, by for example clicking on the desktop, will allow you to do a normal Windows printscreen capture without needing special capture software. That can then be pasted into photoshop/gimp for cropping and saving.
Printscreen to the Windows clipboard from within the game might also wok if you have an LG.INI file (in the Windows dir) with
[WinShell]
DisableWindowsPrintScreen=0

Which version of ddfix do you use for windowed mode? I thought that option had been removed quite a while ago but I haven't exactly been keeping up with it. You can, however, get a similar effect by finding the line "hardware 1" in the shock.cfg and changing it to "hardware 0". This will then allow the menus to appear windowed. I'd tried that before but printscreen didn't work.
However, trying your suggestion and creating a lg.ini file with the lines you posted in the windows directory (I didn't already have one) did the trick in allowing printscreen (or preferrably alt+printscreen) to work and that's probably the best solution. Of course, it's probably best to change the hardware setting back to 1 when playing the game.

I'm not sure which ddfix version, but yeah it probably isn't exactly the latest.
