I've acquired all that I need to finish this quest, but...
[SPOILER]When I go to see Gray Fox, I have two possibilities: I can give him the boots, or I can show him that I know what was in the diary. If I choose the former, he thanks me and promises the next quest. If I choose the latter, he says that he's one of many Foxes and the conversation ends. There's no possibility of giving him the boots.[/SPOILER]
What should I do? I won't be able to finish Thieves' Guild quests, if I choose to discover Fox secret?

just give him the boots, you'll get them back later. Also you'll learn the secret when you master the thieves guild anyway, so don't worry about it.

By that point in the thieves guild quests I had already figured out his big secret. To review:
1) In "Turning a Blind Eye" you can recover a document that talks about a certain cursed item.
2) "Taking Care of Lex" gives you a clue about The Grey Fox's past.
That's all you need to make a pretty good guess. No need to ask him about it.
