You can't unless you erase undead from the user.cfg and start a new game.

You would need to remove the undead line from the cfg, get ShockEd, load the save game using ShockEd (go into game mode with alt + g, hit ESC, load game as per usual) go back into edit mode (alt + e) locate the player object ('find_obj player' command is easiest), edit the player object so that the 'death stage 13' property is removed, check the current hit point level to make sure it's positive, go back into game mode, save, and it should be ok to continue playing through shock2.exe.
Simple, eh?
I think there are alternative instructions somewhere on this forum (from Crion, IIRC) in case I've forgotten anything.

as far as I recall, hybrids don't hit 100% in ss2 original, he shouldn't be able to hit you every time. You could apply a medkit/hypo immidiatelly via keyboard. If you have a pistol equiped you could change to burst and immidiately fire, maybe you'll hit him. Or you could listen to Zygoptera ;)

I solved the problem, i changed my resolution to 640x480 and then went in, this allowed me to see him immediately, get some cover, and circle whack him with the wrench.
I did start a new game though, with mods, so it doesn't matter.

Install it for true 32-bit colour and menus that are the same resolution as the game, so you never have to switch resolutions while playing again.
