 I have always played as a Thief and will do so in this game as well,a thief may not be as strong as other players and not have the type of armor that others have but they can do many other things like sneak around pick locks with ease and few other things that I like about a Thief player.

THERE IS NO HONOR AMONG THIEVES
Oh sweet cock and christ it's going to be difficult to participate in here without scorching all of you a la Comm Chat but I'll give it the ol' college try!
The preset thiefy classes didn't quite have what I wanted so I created my own custom one. I named it the only thing I could think of, which was pretty laffo when the game asked me "are you sure you want to play as an Asshole?"

First, my answer: I play everything as a thief. I cant stand running into anything. Even with no 'thiefing' built into the game, I still slowly go into and survey every situation. It makes some shooters more difficult, but I'm not that quick of a thinker. I need time to check out the room, etc. I also can't stand to bypass a chest or door. If its openable, then I want at it. I tried playing Baldur's Gate as a barbarian until I came across my first chest that was locked, then it was, EXIT GAME, Create new character.
Second, lets not forget the construction set. A fan mod implemented blackjacks fairly well in Morrowind, and several mods centered around sneaking and thieving. If the game is not exactly what you want, odds are, someone else will make it that way, if not, you can yourself.

ROFL! That's hilarious! You know you can make some pretty unsettling characters with that face creation utility. My first test character I aimed to make as freaky ugly as possible. I never played in third person so much in a game in my life. Wish I'd taken some screenshots.

Rolled a thief on my secondary comp.
Promising, but its hard at first.
My sneak attack doesn't do quite enough damage yet, so I often find myself having to fall back on my sword when they get close.
Once I'm able to get on my gaming comp again, I'm gonna roll a mage who's good with a blade. (Think Gandalf as he was portrayed in the fellowship movie). May also add some alchemy and armoring into the mix. Athletics and armor are "meh", I plan to wear robes and move cautiously.

Well, I lied. It told me I was an acrobat. So I compared the stats to the Thief and it was close enough, I took it. I'm still a thief, I just wear tights now.
I am really enjoying this game so far (about 2 hours into it).

Bows do 3 times normal damage in a sneal attack, melee weapons do 6 times normal damaga (I have tried so far daggers, short swords and long swords). I think its clear which should be used for quick kills. ;)

I'm currently a little frustrated with how playing a thief scales. At level 8 I find my average combat encounter goes as follows:
1. I sneak up and get one critical attack off, with either 3x or 6x damage, depending on whether it's a blade or not.
2. Hrm the dude is still alive BIG FACE TO FACE COMBAT BLOCK STAB HYAH
3. Jesus fuck, this dude is
still alive with plenty of life to go and oh shi I'm almost dead :(
4. RUN LIKE HELL where's a guard when you need him?
I didn't have this problem at level 2.
