I'm not sure why I've never seen this mentioned. I found it by accident playing my original Morrowind, but thought it was a bug in the game.
I got GOTY last week and it was listed in the instructions (XBox version).
Double-click the Left Stick and it will lock on sneak mode, but I've found there is a trick to using it. (but it beats some of the other methods I've seen for XBox users to do this, i.e. - duct tape :D ).
If you fail to "sneak" when you press the Stick, then it won't lock... it works best to find a place off to the side where you won't get caught, then lock it on and come back to where you want to use it.

Really? I thought you could always lock sneaking, except if people saw you the key icon wouldn't appear, even though you look like your sneaking. It would only show up when you were safely out of the way. But then again, PC can't lock sneak and I haven't played it on the XBox in... gotta be in almost a year.
