Get Tribunal (if you don't have it yet)! There is a lot more to do in it, as well as in the new expansion pack, Bloodmoon.
But there are plugins that add new monsters, new quests, new places, etc. I might try them out, but I had a lot of problems with the adamantium armour plugin (my little brother downloaded it :p).

Or start a new char. I find this is the best way to play through new guilds. You don't get a very Magey experiance if you go through the mages guild as a Thief that has just become uber at everything. Try to specialize your characters, and pick one or two guilds they will join. Then make a new character to join other guilds. Then try to find all the artifacts. There is lots to do as long as the core gameplay doesn't get boring.

or, simple:
Steal something, get busted, go to jail
-> you will lose some skillpoints
repeat this till are your skills are 0, and start adventuring between the heavy creatures that you encounter (cuz your level is still high). do like a challenge ?
